A brilliant dessert that you will need a finger to make it 👍 ... like the famous thumprint cookies. I thought of creating a sort of union between the pastry cake from which it takes its shape and the shortcrust pastry and the gallette de rois, that is the cake of the three kings, from which it takes the filling: the frangipane cream then the almond cream, without butter and with the surprise in the center. In short, something extremely fantastic, enjoyable, unique and special that will make both adults and children happy. All obviously in the shape of a befana's sock. 📝 INGREDIENTS for the pastry:
300 gr "00" flour
100 gr sugar
85 grams of sunflower oil
1 whole egg plus 1 yolk (large eggs at room temperature)
1 pinch of salt
2 teaspoons of baking powder, vanilla
the peel of an organic orange
📝 INGREDIENTS for the almond cream:
150 grams of peeled almonds
75 grams of sugar
1 whole egg plus the egg white left over from the pastry
1 pinch of salt
2 teaspoons of maraschino or cointreau liqueur
📝 INGREDIENTS for the surprise:
chocolates to taste
or almonds
hazelnuts
♨ COOKING:
180 ° for about 15-20 minutes
balls of 13-14 gr each
