Ingredients

Puff pastry
All-purpose flour 40g
Water 35g
Coconut milk 35g
Salt 1g
Sugar 1g
Unsalted butter 20g
1 egg (about 60g)
First 200°C (392°F) 12 minutes
Then 180°C (356°F) for 5 minutes
Last 150°C (302°F) 18 to 20 minutes

Coconut White Chocolate Ganache
White chocolate 150g
Cold pressed coconut oil 45g

Tempered white chocolate 300g
First heat to 45°C (113°F)
Then cool down to 27°C (81°F)
Finally the temperature rises to 28°C (82°F) to 29°C (84°F)

Desiccated coconut 100g
