R E C I P E:
1 + 1/4 cup all purpose flour
1/2 cup rolled oats
1/2 cup almond flour
3/4 cup oat flour
3 tsp pumpkin pie spice
1/4 tsp cinnamon
1/4 tsp ginger spice
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup coconut sugar (you can use any type of sugar)
1 flax egg (2 tbsp ground flax seeds + 3 tbsp water)
2 tsp vanilla extract
1.5 cups pumpkin puree
3 tbsp applesauce (Or sub for more pumpkin puree or mashed banana)
1/2 cup almond milk (or milk of your choice)
1/4 cup vegan chocolate chips + more for topping

Add all dry ingredients into a bowl and stir until well combined
In a separate bowl add all wet ingredients (except for the milk) and stir until well combined
Then add the wet ingredients to the dry and fold gently. Add in the milk.
Once everything is well combined fold in your chocolate chips. Then transfer into a nonstick or lined loaf pan
Bake at 350F for 1 hour covering halfway so it doesn't burn!
Allow loaf to cool completely before slicing and serving!
