A healthy GF, sugar free and vegan version of blueberry muffins!
RECIPE:
Preheat oven to 200degrees and bake at 200 degrees celsius for 25 mins
Add some coconut sugar to the recipe if you like :)
Dry:
2 cups buckwheat flour (substitute with any other flour)
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/3 cup coconut flakes (optional)
Wet:
1 small mashed banana
1 flax egg (1 tbsp flaxmeal 2 tbsp water)
1 tsp vanilla extract
3 mashed dates
1 1/2 cups almond milk (I'd recommend adding an extra 1/4 cup too making it a bit more wet.. try it out yourself) (can sub with other plant milks)
1 cup blueberries
