If you LOVE cheesecake; I mean, rich, creamy, decadent, smooth & silky REAL cheesecake, then you're going to adore this easy to make spring berry harvest variety! 

In this easy to follow quick demonstration video, Sarah shows you how to bake this fruity & savory dessert from scratch using the absolute best possible ingredients.

Additionally, this smooth & creamy cheesecake uses lavender essential oils in the batter! This ingredient adds a hint of floral scent to the cake which is the perfect compliment for the sweet berries. Lavender helps create a relaxing & calm mood while helping to alleviate gut pain attributed to painful constipation. Making this the ultimate comfort dessert!

Ingredients:

Crust:
15-18 oz Oat or Granola Clusters
⅓ cup Fine Chopped Pecans
⅛ cup Coursely Chopped Pecans
½ cup White Sugar
½ stick Unsalted Butter
1 large Egg White

Cake Batter:
32 oz (4 blocks) Cream Cheese
.4-.5 lb Brie or other Soft Cheese
2 cups Mixed Berries
(diced small)
     -I used: ½ Cup Raspberries, &
                    ¾ Cup each-
Blueberries
                     & Strawberries
1 ½ Cups White Sugar
4 Large Egg Whites (Room Temp)
1 tsp Vanilla Extract
½ tsp Raspberry Extract
5-7 drops Lavender Essential Oils
    (Edible, Pharmaceutical Grade)
⅓ cup Unsalted Butter
(Room Temp)
½ tsp Crushed Dried Orange Peel
½ tsp Ground Nutmeg
¼ tsp Ground Cloves

*optional
(for marbling & extra zing)
4 tablespoons Berry Jam, preserves or fruit spread
(at room temperature)
& if needed ¼ - ½ tsp Maple Syrup to thin jam if it is still too thick to gently swirl in.

Directions:
Preheat oven to 375° Fahrenheit
Pre grease & lightly flour large 10" spring form pan.

To Prep Crust:
Finely Chop Clusters & mix with all pecans & sugar.
Cream in butter & Egg white until all granules fully coated evenly & moist.

Press mixture into bottom of pan.

Bake for 12-15 minutes, or until golden brown.

Remove from oven & cool to room temp

To Prep Cake Batter:
Cream together both cheeses with butter until smooth.

Cream in Sugar

Mix in Egg whites until even

Blend in extracts, lavender Essential oils & lastly spices until completely incorporated.

Gently fold in berries

*Optional- Swirl in Fruit Spread

Pour into pan on top of cooled crust

Bake at 375° for 40 minutes or until golden brown on top & just starting to seperate from sides of pan, on center oven rack.

Remove & cool to room temperature

Transfer to cool completely in fridge.

Slice & serve.

Top with Cool Whip & whole Berries if desired.

(not including cool down)
14 minutes for Crust plus
40 minutes for cake
