How to Make a Pinwheel Roast

Feeling creative for dinner tonight? Sarah shows you a great dish called a Pinwheel Roast in this video. Using spinach, peppers, onions, mushrooms & a great cheese sauce, Sarah wraps it all up in an unfolded Pork loin with a meaty ground pork center.

Watch & learn this technique for this savory, herby, cheesy main course and follow along with the same ingredients or change it up to suit your unique tastes!

Ingredients:
2-4 lb pork loin (solid piece)
1.5 lb ground pork
1.5 cups shredded colby jack cheese
¼ lb fine chopped carrots
½ lb baby spinach
½ lb thin sliced brown mushrooms
½ cup fine chopped sweet yellow onion
½ each fine diced red & green bell peppers
1 - 8 oz block of cream cheese
½ stick unsalted butter
2 large eggs
Worchestershire Sauce
1 tbs & 1 tsp minced garlic
1 tsp each parsley, basil, sage, salt &
    pepper

Directions:
Preheat Oven to 375° F

Unfold pork loin into thin flat sheet.
Mix all herbs & spices.
Coat one side of loin sheet with Worchestershire sauce & seasoning blend.
Leave at least half the seasoning blend.

Prep cheese spread:
Blend cream cheese, butter & eggs on high 2 minutes or until smooth.
Mix in 1 cup shredded cheese, ½ tbs garlic & ½ (about 1¼ tsp) seasoning blend into cream cheese spread on medium until evenly incorporated.

Prep Ground Pork: (can be substituted with Breakfast Sausage)
Mash together ground pork, remaining seasoning blend & ½ tbs garlic. Knead until smooth & even.

Begin layering up!
Spread ½ cream cheese in a thin layer on seasoned meat flat.
Place spinach on in a single layer.
Spread remaining cream cheese on top of spinach layer.
Distribute carrots in a layer on top of 2nd cream cheese layer.
Press ground pork (or sausage) thin and lay on top of carrots. Ensure entire surface is covered.
Mix together peppers & onions & distribute in a layer on top of ground pork.
Press into pork firmly.
Cover with remaining shredded cheese.
Place mushrooms on cheese in a single layer.
Cover with more cheese if you like.
Roll layered meat flat carefully so as not to displace layers.
Squeeze gently & tie up with string to keep roll from opening up during cooking.
Wrap in foil & place in casserole dish.

Bake at 375° F for 1 hour
Raise oven temp to 400° F
Bake an additional 30 minutes
Remove from Oven
Slice and serve!
