Craving for a lemon snack? Make this delicious cake using only 1 lemon with a right balance of sweet and tangy flavor perfect as a coffee companion-

RECIPE:
✅ CAKE BATTER
200 grams fine granulated sugar
Zest of 1 lemon
2 large eggs, room temperature
130 grams heavy whipping cream
125 grams vegetable oil
2 teaspoons lemon juice
190 grams cake flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon vanilla extract
✅ GLAZE
60 grams powdered sugar
1 tablespoon lemon juice

Lemon shavings for decoration

BAKING TIME: 50 - 55 minutes or until toothpick comes out clean when inserted
BAKING TEMPERATURE: 160'C
BAKING PAN USED: 8 x 4.5 x 3 inches loaf pan, greased and lined with parchment paper
OVEN USED: Convection oven

◾If you love lemon flavored cakes but not too overpowering, try this recipe - the balance of sweetness and tanginess is perfect
◾Use a foil to cover the top of the cake 10 minutes near the baking time to prevent from too much browning
◾You may use sour cream instead of lemon juice and heavy whipping cream as a substitute; but utilising the juice adds more depth of flavor to the cake
◾Use medium ripe lemon for this recipe for best results
◾DIFFERENT OVENS VARY IN TEMPERATURE SO PLEASE ADJUST ACCORDINGLY
