DESCRIPTION
Barbecuing with a rotisserie is a very unique grilling discipline in and of itself. Anyone who has experienced it before, knows what it means to watch a roast on a spit as it rotates on the rotisserie over hot coals forming a gorgeous looking crust.

Firstly - The rotation of the roast on the spit allows for optimal heat distribution. And when the lid of the ceramic grill is closed, the heat circulates evenly around the roast. This results in very even cooking and is what actually makes roasting near perfect.

Secondly - Heating the roast or piece of meat forces the fat and meat juices to come out. Because the meat always rotates, the juices roll over the surface, over and over, and drip a litte, if at all, because of the rotation. As it rotates, it develops a crust, which gives the roast an excellent flavour.

Thirdly - The eye just devours it. Watching the roast turn on the spit as the crust forms, develops your appetite, making you really hungry and looking forward to when it will be served on a plate.

1:23 Which pieces of meat are particularly suitable for the rotisserie?

These are all rounded types of roasts. The shape allows the formation of a crust, which prevents the fat and meat juices from dripping off the roast, allowing the crust to form nicely on the surface. You can either get roasts which you need to roll up and tie up with twine. Or you can get the roast prepared by your butcher.

Also, all types of poultry such as chicken, duck and goose work great because they are very fatty. All fatty pieces of meat are great for the rotisserie because they contain just enough fat for forming a wonderful crust on the surface.

1:57 Now here's a tip:
Not only can you grill meat on a rotisserie, but pineapple as well, for example. Simply peel it, run it through the spit, and let it rotate over the charcoal fire. But because a pineapple doesn't contain fat, you have to make the crust form by applying a marinade yourself, such as sugar, rum, or a bit of cream. Just brush it backwards and forwards, over, and over again. This creates a wonderful crust and makes for a fantastic dessert.

With the ceramic grill, you can close the lid. You naturally have shorter cooking times on the one hand.

On the other hand, there's temperature control. That means you can regulate the temperature.

Lastly, of course, it's the incomparable taste of a fine roast over charcoal.
