Recipe 1: Banana waffles🍌

Ingredients:
🔹2 medium bananas
🔹2 eggs
🔹20 g ground flax seeds
🔹60-80 g flour (I have whole grain spelt)
🔹100 g natural Greek yogurt 8-10% fat
🔹salt
🔹cinnamon
🔹1 tsp baking powder
🔹vegetable oil for greasing the pan

Recipe 2: Quinoa salad🥗

Ingredients:
🔹Quinoa 100 g
🔹Water for cooking quinoa in a volume ratio of 1:1.5
🔹Cucumber 1 pc
🔹Large tomato 1 pc
🔹Red onion 1 small
🔹Parsley bunch
🔹Olive oil 3 tbsp
🔹Salt and spices to taste (I have dry garlic, smoked paprika, cumin)
🔹Lemon juice to taste
🔹Feta cheese optional 30-50 g
🔹Shrimp or other protein optional.

Recipe 3: Zucchini fritters with tzatziki sauce🥒

Ingredients:
🔹Zucchini approximately 700 g
🔹Eggs 2 pcs
🔹Canned corn 100 g
🔹Red onion 1 small
🔹Parmesan cheese, mozzarella or other 50-70 g
🔹Parsley bunch
🔹Bulgarian pepper 1/2 piece
🔹Flour (I have whole grain spelt, but you can use any) 80-90 g
🔹salt 1 tsp. (to salt the zucchini)
🔹pepper and other spices as desired (I have dry garlic, turmeric, cilantro, nutmeg and cumin)
🔹vegetable oil to drizzle on top.

Tzatziki sauce:
🔹Natural Greek yogurt 8-10% fat 300 g
🔹Cucumber 1 pc
🔹Bunch of dill
🔹Dry or fresh garlic to taste
🔹Salt, pepper.
