Two different waffle recipes to celebrate a favorite Swedish food holiday! The first recipe comes from my Nana, my paternal grandmother, and are the ones I ate everyday I slept over. The other comes from my time working in a 3 michelin star restaurant. Try both and see what you think!
Nana’s Waffles
118g water
21g fresh yeast
450g Milk
113g Butter
6g Salt
6g Sugar
240g AP
100g Eggs
2g baking soda
Whisk together milk, water, and yeast.
Whisk in all dry ingredients.
Whisk in melted butter.
Cover and set in the fridge over night.
The next day whisk in both eggs and the baking soda.
Make your waffles :)
Restaurant Waffles
240g AP
12g Sugar
5g Vanilla sugar
6g Baking powder
4g Salt
300g Milk
120g Cream
84g Sparkling water
120g Melted butter
24g Tapioca flour
Combine all liquids.
Sift together dries.
Whisk liquids and dries together
Whisk in melted butter.
Allow to rest for 2 hours before making.
