Making Limoncello and Crema di Limoncello for hosting and gifting.

Ingredients:

Base for both versions
10 Organic Lemons
1 Liter 95 % Alcohol (190 proof)
(We will split the base in half)

Limoncello:
750 ml Filtered Water
375 g Sugar

Crema di Limoncello:
1 Liter Milk
475 g Sugar
1-2 tsp Vanilla Extract

Method:
1. Remove the zest/peel of the lemons with a vegetable peeler. Make sure the peel is very thin without any visible white pith. The white pith will add bitterness, so avoid it. We just want the thin outermost membrane with all the flavor, oils, and yellow color.
2. Transfer all the thin peels into a large clean jar, ass the alcohol, mix and let at room temperature for 2 weeks. Shake the bottle a few times a week. The alcohol will slowly extract all the flavor and color from the peels and turn a bright yellow.
3. After 2 weeks it's ready to dilute. Strain the peels and split the liquid into two portions. Since we had a liter of alcohol, you will have 500 ml for each version.
4. Get 2 pots ready. One for each version you're making.
5. For limoncello, bring the water to a boil, add sugar, wait for the sugar to fully dissolve in the water then mix. Set aside to completely cool to room temperature. Add the 500 ml of alcohol to the sugar water, mix, and pour into glass storage jars. It should look yellow and cloudy. Store in the freezer, wait a week for the flavors to blend and enjoy after dinner as a digestif. Will keep in the freezer for up to a year.
6. For crema di limoncello, bring milk to a boil, skim the top film, add sugar, let it cook into the milk then mix with a spoon once it's fully incorporated. Let this cool completely and come to room temperature. Do not mix alcohol into the hot liquid, it will ruin it. Once completely cooled, add vanilla extract, and 500 ml of the strained alcohol. Mix well and pour into glass store bottles. Store in the freezer. Wait a week for the flavors to blend and enjoy a glass after dinner.

I like to juice the lemons and make lemon ice cubes and drop one into a glass of sparking water. Or just save the juice for lemonade and cooking.
