Summer Sausage That Anyone Can Do , Really!

I love making summer sausage, and I think I have come up with my perfect recipe. It is much less complex than some recipes you see but it has great flavor. And contrary to what you may assume, you do not need a lot of special equipment to make it. You can even do it in your home oven. Recipe for 5 lbs (I did half of this recipe in the video):
* 5 pounds 80/20 ground beef, ground pork or a combination
* 2 ½ teaspoon of mustard seed
* 2 ½ teaspoon of coarse black pepper
* 2 teaspoon of garlic salt
* 4 teaspoons of liquid smoke
* 5 teaspoons kosher salt
* Curing Salt (Prague Powder #1)…follow instructions on package, I used 1 tsp for 5 lbs of meat.
* 200 ml water (1 Cup)
* 3 TBS Milk Powder
* .79 oz (~5 tsp encapsulated citric acid) (optional and add late and don’t mix too much)
* Can also add cheese or other ingredients like jalapeño, 1/2 bottle lighthouse dried jalapeños, high temp cheese per instructions

Case or form into a roll(s) and cook on lowest setting to an internal temperature of 150-155 degrees.
