In this video I make summer sausage at home but using an all you need kit that included casings, cure, seasons, and detailed instructions.
I failed to mention that after stuffing into the casings I let the cure work for about 16 hours in my fridge before smoking. This is an important step that is in the preprinted instructions.
Was it worth it? 100% yep.
