Spicy Carnitas Seasoning Recipe

2 tbsp Garlic Powder
2 tbsp Ground Cumin
2 tsps Mesquite
1 tbsp Himalayan Salt
1 tsp Ground Black Peppercorns
1 tbsp Dried Lemon Peel
1 whole Smoked & Dried Bell Pepper
4 Whole Dried Chipoltes
1 tsp Dried Coriander Seeds

Smoked Rib Recipe

INGREDIENTS

MEAT
2 Slabs Pork Of Baby Back Ribs
BINDER
Dijon Mustard
SEASOING
4 To 6 Tbsp Spicy Carnitas Seasoning Recipe Above
Aluminum Foil
1 12oz Beer Of Choice

INSTRUCTIONS
1- Prep the smoker to reach temperature 225'F
2- Remove the silver skin off the back of the ribs. Brush on dijon mustard starting with the back of the ribs first.
3- Heavily Season the ribs pat down then flip over. Repeat using the dijon mustard binder, apply the seasoning pat down.
4- Place the ribs on the rack in the smoker. Allow to smoke for 3 hours. Lay out 2 layers of aluminum foil.
5- Place the ribs in the foil and pour in the beer wrap tightly then place back into the smoker for 2 hours.
6-Take the foil and create a boat with it curling the edges toward the ribs. Glaze using a brush and place back into the smoker for 1 hour.
7- Allow the ribs to rest 10 minutes before slicing to retain moisture,
