There are many ways to small dice an onion. I allowed my OCD to focus on a better way for many months and fortunately ended up with this process.

Although this video is about 90 seconds long, that isn't how long it takes to small dice an onion with this technique. Yes, it's a little slower than how they may have taught you in culinary school or in a commercial kitchen, but it's by far the best way to get even square cuts out of a round and layered onion without cutting toward your hand or wasting product.
