I’m in Afghanistan, about to embark on a culinary journey with dishes from Herat and Kabul. Stay tuned for an experience like no other!

Exquisite items in Herat:
1. Afghan Qabeli Palaw: A masterpiece dish of meat, rice, raisins, and carrots served in large pots. Paired perfectly with Afghan local bread and Afghan Doogh with mint.

2. Chicken and Meat Karahi: Emirate Restaurant serves delicious Karahi dishes with Meat Karahi and Chicken Karahi. Prepared with a mix of garlic, tomatoes, chili, and water, creating juicy and flavorful dishes. Famous for Qabeli Palaw, this restaurant is known for its Karahi lamb meat cooked with garlic, tomatoes, and peppers, served with Afghan bread. The Karahi chicken is equally delightful, with a side of their famous garlic yogurt.

3. Kichiri Goshte Land by Bacheye Malang: Unique dish involving a special preparation process. The sheep is inflated, scorched, washed, chopped, salted, and buried in tall wood for 40 days before being boiled with Leyla Far rice to create a flavorful meal. This dish, crafted by Bacheye Malang, is considered the world's most delicious with a rich meat broth and tender meat placed atop rice. Afghans are known for their hospitality, making Kichiri Goshte Land a must-try experience.

4. Patnoosi Bread: Famous Afghan rectangular bread traditionally made with a tray-like shape, punctured with tiny holes using a special stamp for hygiene. Baked in beautiful traditional ovens, served with delicious kaymak, sarshir, and local butter.

5. Amazing 10 meter Shami Kebab: Prepared by Chef Heidari and Mr. Taster. From slaughtering the sheep to BBQ perfection, the incredible flavors of Afghani kebab !

6. Qabeli Moling: At Shinwari restaurant, an exquisite Qabeli Moling dish served in a pot with a generous portion of meat. With sesame oil featuring rice, raisins, carrots, and split peas cooked in rich broth and topped with bone marrow, creating a uniquely delightful dish.

Delicious dishes in Kabul:

1. Calf trotters & bone marrow: At Gholam Rasoul in Kah Forooshiha alley, a dish of calf trotters with bone marrow, prepared with flavorful broth, garlic, and an extra touch of calf bone marrow. It is rich, juicy, and uniquely satisfying, showcasing the essence of Afghan culinary delight. Top it off with a splash of lemon for an exquisite burst of flavor.

2. Afghani Chainaki: Vahid Restaurant offers the famous Chainaki, a delightful blend of meat, chickpeas, and beans cooked for hours until tender. Prepared in tea pots instead of traditional Dizi pots, this 100-year-old dish is renowned for its rich taste. Served with Afghan bread and sour orange.

3. Afghan Chapli Kebab: Hassan and Roozodin Panjshiri have this masterpiece dish which features flattened meat fried in oil with eggs and topped with chili sauce. The yogurt and garlic chutney is a must-try for a delightful twist!

4. Traditional Afghani Bread: Baked in a traditional bakery for 20 Afghani each. Tradition meets love in their baking process, creating extraordinary bread famous throughout the city. The passion and speed of their bakers as they craft each loaf with care are a sight to see.

5. Ash-e Doogh: A delightful dish originally from Ardabil, Iran prepared with curd, coriander, and warm hospitality of the Afghani people. A must-try that bridges cultures and flavors at the bustling Pol e Kheshti mosque.

6. Bolani: A popular Afghan dish, a fried delicacy filled with potatoes and seasoned with salt. The dough is filled, folded, and fried until golden brown, creating a crispy and flavorful treat. Served with a delicious sauce, a delicious street food in Afghanistan, priced at 10 Afghani each.

7. Aushak, Mantu, Rosh kebab & Qabeli Moling at Ziyafat Restaurant: The exquisite Aushak and Mantu, traditional Afghan dishes consist of thin dough filled with onions, cilantro, and black pepper, then sealed and steamed to perfection. Served with lentils and a delicious white Ghoroot sauce, Aushak is a vegetarian delight while Mantu offers a savory meat-filled option. Rosh kebab is juicy slow-cooked meat that melts in your mouth.
