I've been baking for over 10 years and for a while, I thought making cookies was just routine because they seemed so ordinary. That changed when I saw Chef Cedric Grolet's cookies. They inspired me to get creative. Although I love his style, his cookie recipe has too much sugar for my taste, so I decided to come up with my own. This recipe is inspired by Cedric Grolet but it's a different recipe. The result? Cookies that are absolutely delicious, especially with the addition of peanut butter and caramel sauce. They're not just any cookies—they're a treat that's out of this world, thanks to the caramelized peanuts and a sprinkle of sea salt. Just incredible!

Unsalted butter 70g
Peanut butter 35g
Brown sugar 90g
Sugar 45g
1 Egg 50g
All purpose flour 150g
Pinch of Salt
Baking soda 3g
Unsalted peanuts 40g
Vanilla extract 3g (Optional)

Bake at 335F for about 15 minutes

One cookie is for about 50g

Caramelized peanuts
Sugar 15g
Water 7g
Unsalted peanuts 100g
Unsalted butter 3g
Fine salt 1g


Caramel sauce
Brown sugar 100g
Butter 40g
Heavy cream 35% 90g (Hot)
Corn syrup 12g
Salt 1g

Toppings for cookies
Peanut butter (6-7g per one)
Caramel sauce (Used almost everything with the recipe above)
Maldon sea salt
