Here is how you make guobaorou!

Guobaorou

[Ingredients]

*Deep-frying

Cooking oil (for frying) 1.8L
Pork loin 500g
Potato starch 2 cup (240g)
Water 1 cup & 2 tbsp (200g)
Egg wash 2 tbsp (20g)
Flavoring salt
Pepper

*Sauce

Cooking oil 2 tbsp (14g)
Minced ginger 1/2 tbsp (8g)
Dark soy sauce 2 tbsp (20g)
Sugar 5 tbsp (50g)
Vinegar 5 tbsp (50g)
Water 4 tbsp (40g)
Green onion
Carrots
Lemon

[Directions]

1. Cut pork loin into 0.3-cm thick pieces.
2. Remove the stem, then finely slice the green onion at 6-cm length.
3. Season pork loin with flavoring salt and pepper.
4. Mix potato starch, egg wash, and water to make the deep-frying batter.
5. Pre-heat the oil to 170 degrees and mix the meat with batter.
6. Deep-fry the meat twice in heated oil and then drain the oil.
7. Add cooking oil to a pan and pan-fry the minced ginger.
8. When the flavor is infused, add soy sauce, water, and sugar, and bring to boil.
9. When the sauce starts to boil, add lemon, carrot, and green onion, and boil down.
10. Once the sauce gains consistency, mix with the deep-fried meat.
