I always had a love-hate relationship with Cornmeal Pudding growing up. I really enjoy the soft custardy coconut top and the softer parts but closer to the bottom was always tough and I didnt really enjoy it as much. I use to just cut off the top and just have that....with this recipe I get a more rounded and even texture right throughout the entire cornmeal pudding, I use some delicious spices like star anise and cinnamon for an awesome taste and simplified the recipe as much as possible.
