A pork belly recipe that is very popular in my family. In this recipe we will not fry, boil or bake. A unique pork belly recipe. The recipe is to keep the pork belly for as long as possible. A ready-made pork snack is always ready to hand - just put it in the freezer and take it out when needed. Cook with love! Cook with joy!

Ingredients and preparation:
1.5 kg pork belly
Cut off the ribs
They can be used for other dishes
Cut the pork belly into pieces
Pour into glasses (or other suitable containers).
Do not stack too tightly so there is enough room for the brine
150 grams of salt
1 liter of water
Bring to a boil to dissolve the salt
Pour the brine over the pork belly
I use hot brine, but cold brine also works
Leave at room temperature (24°C) until completely cool
Then keep in a cool place (refrigerator) for 2 days
After 2 days, pour off the brine and rinse the jars
1 liter of water
150 grams of salt
1 teaspoon of sugar
1 tablespoon black peppercorns
2 bay leaves
½ teaspoon chilli flakes
Bring to the boil and dissolve the salt in it
5-6 cloves of garlic
Put the garlic and pork belly in the jars
Top up with brine (cold or warm).
Make sure the brine is evenly distributed
Leave to cool at room temperature
Store in a cool place (refrigerator) for 7 days
After 7 days, remove the pork belly and pat dry with a paper towel
A bunch of dill
garlic
garlic
paprika
A pinch of hot red pepper
oregano
Mix well
Use any seasoning you like
Only black pepper can be used
Rub pork belly pieces with spices
Or dill
I will also add black pepper
The pork belly is ready to serve
You can also leave the pork belly unseasoned
Better when served chilled
Wrap the pork belly pieces in foil or parchment paper
Store in the fridge or freezer (for long-term storage up to several months)
