Crushed pineapple - 1 cup
Brown sugar - 1/2 cup
Soy sauce - 1/4 cup
Ketchup - 1/4 cup
Apple cider vinegar - 2 tbsp.
Garlic - 2 cloves
Ginger - 3-4 cm
Chili flakes - 1/2 tsp (optional)
Salt - 1 tsp.
Ground black pepper - 1 tsp.

Preparation:

For the marinade, combine black pepper, salt, apple cider vinegar, sugar, chili, soy sauce, ketchup, pineapple juice, pineapples, crushed garlic, and chopped ginger in a large bowl.

Mix well.

Remove the membrane from the ribs.

Marinate the ribs in the marinade for 2 hours.

Remove the ribs from the marinade, wrap in aluminum foil and place in a preheated 356°F. (180°C ) oven for 1.5 hours.

Meanwhile, prepare the pineapple glaze.

Boil the remaining marinade, stirring, over medium heat until thickened, about 7-10 minutes.

Brush the ribs with the thickened glaze and grill for about 5 minutes on each side, until caramelized and golden.

Serve, drizzled with glaze and pineapple chunks on top.

Bon appetit!
