Hi there. Today, I made a few dishes great to whip up in summer. Though the summer sandwich is a simple combo of ham, cucumber and tomato, the crunchy texture and spicy Chipotle spread make for a great tasty and refreshing dish. But if you’re not a cucumber person, this may not be it for you. Also I made my first gimbap in a while, and it reminded me it’s better to make it myself than buy it.

Gimbap is my favorite Korean food, but it spoils so quickly in summer. Making it in small portions like this makes it more fun, and also tastier.

Lastly, I made my current favorite kimchi. This kind of kimchi is usually made with cucumber, but I made it with crispy pepper called oi-gochu, which isn’t spicy. It’s super easy to make, so do give it a try. And the best match with kimchi has to be gukbap (hot soup and rice). If you add more veggies like bracken to the soup, then you get a soup called Yukgaejang. There’s a saying in Korea, that you have to beat heat with heat. Koreans try to overcome the hot weather with hot soups and dishes.
