Olan (serves four)
Prep time- 15 minutes
Cooking time- 25-30minutes
Ingredients:
2 Medium sized courgettes
2 medium sized potatoes
Half a butternut squash
10-15 French beans
1 can of black eyed peas
4 green chillies
Handful of curry leaves
1 can of coconut milk
2 tablespoons of coconut oil
Salt to taste

Slice the courgettes, potatoes and butternut squash into half moon slices. Slice the beans into one inch long pieces. Slit the green chillies.
Add all the veggies and a can of black eyed beans drained, into a casserole dish or a wok. Add about 150mls of water, salt to taste and cook on medium heat with the lid on for about 15-20 minutes. Once the vegetables are cooked, add in a can of coconut milk. Cook for another minute to allow the coconut milk to warm through. Do not over heat as this will cause the coconut milk to split. If the dish is watery, mash some of the cooked potato slices and add it back into the dish to thicken. Add two tablespoons of coconut oil and some curry leaves for garnish. Serve with steaming hot rice.
