I have a hopefully delightful tutorial for you all today featuring one of my newly learned skills--palette knife flowers!

In the beginning you can see me putting together a simple Italian Meringue Buttercream--unflavored as it is just for playing around with. You can use this right away, keep it at room temperature for a couple of days or in the refrigerator for up to a week.

These flowers look complex but they are actually very easy once you get the hang of it...at least when you are placing them on a styrofoam block you can move around 😂 All you need is one or more small palette knives, a wooden cutting board and buttercream. Everything else is just a bonus.

Smear a thin layer of buttercream down onto the board and with your palette knife held at a 45 degree angle, slowly but firmly pick up more and more buttercream each time. Of course there are many nuances and details to create the different sizes, shapes and placements of the petals and leaves, but that is about the gist of it. I hope after some more practice at both my flowers and filming I can create an actual step-by-step of this and many other pastry videos!

*My recipe for buttercream that I like to use for this technique is an all egg white Italian Meringue buttercream:

180g large egg whites
200 g white granulated sugar
80g water
450g unsalted butter, room temperature
1 tsp extract or flavoring

Method: Heat the sugar and water to 118C while beginning to whip your egg whites. Stream in the sugar after it has reached 118C into the whites and whip on high until they have cooled from hot to warm and are fluffy. Turn the speed to medium and add in small amounts of butter at a time and finally the flavoring at the end.

**I originally learned this technique from @yunaflower_cake (find her on instagram, she is crazy talented!) I took one of her private classes at her studio in Seoul and I am hoping for the opportunity to go back and learn more from her in the future!
