Lauki halwa, also known as dudhi ka halwa or bottle gourd halwa, is a popular Indian dessert made from bottle gourd (lauki or dudhi), milk, sugar, and ghee (clarified butter). Lauki halwa is especially popular during festivals like Diwali or Holi, where sweets are an integral part of the celebrations. Bottle gourd, the main ingredient, is low in calories and rich in dietary fiber, making the halwa a relatively healthier dessert option compared to others.

Ingredients Quantity
Bottle gourd 1 no
Milk 1 litter
Sugar ½ cup
Ghee 1 tbsp
Cashew nuts chopped 8-10 no
Almonds sliced 6-7 no
Raisins 7-8 no
Spinach puree 2 tbsp
Pistachio powder 3 tbsp
Khoya ½ cup
Green cardamom powder 1 tsp
Nuts sautéed for garnish
Pistachio powder for garnish

Method :-

1. Take a gourd, then peel it and cut the core part.
2. Now grate the peeled bottle gourd finely.
3. Now side out in a bow and wash with clean water well.
4. Place a kadai on medium flame and add milk.
5. Squeeze out excess water from the grated gourd then add in milk.
6. Cook the mixture on medium heat, stirring occasionally, until the milk is absorbed and the bottle gourd is completely cooked. This may take around 20-25 minutes.
7. Add the sugar to the cooked gourd mixture and stir well.
8. Continue cooking until the sugar dissolves completely and the halwa thickens. This will take another 10 minutes.
9. Place a pan on medium flame and heat ghee. Add chopped cashew nuts, sliced almonds and raisins sauté well, Add in a halwa.
10. In that pan add spinach puree cook for a minute and add in a halwa.
11. Add pistachio powder and Khoya mix well.
12. Now add green cardamom powder and mix well.
13. Turn off the flame and side out in a serving glass garnish with sautéed nuts and pistachio powder.
