Chicken Curry with Coconut Milk

Ingredients:

oil for cooking
⁠1/2 tsp fenugreek/methi seeds (optional)
⁠2 whole chicken cut into large pieces (about 1.5 to 1.8kg)
⁠5 medium potatoes (peeled and halved)
⁠2 stalks lemongrass (optional)
⁠2 sticks cinnamon
⁠5-6 star anise
⁠2 medium onion
⁠1 spoon brown sugar
⁠4-5 cloves garlic + about equal size ginger + 3 red chillies pounded together
⁠1 spoon salt or to taste
⁠1 spoon Babas meat curry powder
⁠1 spoon ground mixed cumin and coriander (2 parts cumin, 1 part coriander seeds dry roasted on a pan and ground - in the video I add this towards the end of the cooking)
⁠1/2 spoon kashmiri chilli powder (mostly for colour, although it gives a little spiciness)
⁠1/3 spoon turmeric
⁠1 litre coconut milk (not cream)
⁠500ml water
⁠2 tomatoes
⁠fresh coriander for garnish
