1 cup oil of your choice
3 eggs
1 tsp vanilla
3 cups grated carrot
2 cups flour
1 tsp baking soda
1 tsp baking powder (sifted)
1/2 tsp salt
2 tsp cinnamon
1 tsp ginger
1 tsp nutmeg

Bake at 350F degrees for 24mins
