🍋 Lemon Bar Recipe 🍋

Preheat oven to 350 degrees Fahrenheit.

Line an 8inch x 8inch pan with parchment paper.

Shortbread Crust
In a bowl, combine:

1 cup salted butter (melted)
1/2 cup powdered sugar
1 1/2 cups flour (regular or gluten free works)

Press dough into pan and bake for 20 minutes.

Lemon Curd
In another bowl, combine:

3/4 cup granulated sugar
6 eggs
1 tsp vanilla
2/3 cup lemon juice
2 tsp flour

Pour lemon curd mixture on top of baked shortbread crust.

Bake again at 350F for 25 minutes.

Cool completely, top with icing sugar and cut into bars.
