Ingredients:

• Meatloaf:
• 1 ½ pounds ground beef (preferably 80% lean)
• ½ pound ground pork
• 1 cup finely chopped onion
• 1 cup finely chopped green bell pepper
• 3 cloves garlic, minced
• 1 cup breadcrumbs
• 1 cup milk
• 2 large eggs, beaten
• ¼ cup ketchup
• 2 tablespoons Worcestershire sauce
• 1 tablespoon Dijon mustard
• 1 teaspoon dried thyme
• 1 teaspoon dried oregano
• 1 teaspoon salt
• ½ teaspoon black pepper
• Glaze:
• ½ cup ketchup
• 2 tablespoons brown sugar
• 1 tablespoon apple cider vinegar

Instructions:

1. Preheat Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
2. Prepare the Vegetables:
In a large skillet, sauté the chopped onion and green bell pepper over medium heat until they are soft and translucent, about 5-7 minutes. Add the minced garlic and cook for another 1-2 minutes. Remove from heat and let cool slightly.
3. Mix the Meatloaf:
In a large mixing bowl, combine the ground beef, ground pork, sautéed vegetables, breadcrumbs, milk, beaten eggs, ¼ cup ketchup, Worcestershire sauce, Dijon mustard, dried thyme, dried oregano, salt, and black pepper. Mix gently with your hands or a large spoon until all ingredients are evenly incorporated. Do not overmix to keep the meatloaf tender.
4. Shape the Meatloaf:
Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape it into a loaf, smoothing out any cracks.
5. Prepare the Glaze:
In a small bowl, whisk together ½ cup ketchup, brown sugar, and apple cider vinegar until smooth.
6. Glaze and Bake:
Spread half of the glaze evenly over the top of the meatloaf. Reserve the other half for later. Bake in the preheated oven for 45 minutes.
7. Add More Glaze:
After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze over the top. Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
8. Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing. This helps to keep it moist and makes slicing easier.
9. Garnish and Enjoy:
Garnish with fresh herbs like parsley or thyme if desired. Serve with your favorite sides, such as mashed potatoes and green beans.
