Pavlova is an Australian dessert made with meringue, whipped cream and red fruit. It is both crisp and creamy, and is best eaten cold. Contrary to what you might think, its taste is not loaded with sugar.

For this recipe, we will need:

- for the meringue: 3 egg whites (120g), 100g caster sugar, 100g icing sugar, 8g cornflour, 2g lemon juice
- For the whipped cream: 400ml full cream, 260g mascarpone, 60g sugar
- for the garnish: 125g blueberries, 125g raspberries, 100g strawberries
