[Japanese Infant Food] Boiled Mackerel in Miso

Today I would like to introduce a recipe for boiled mackerel in miso where you can cook the dish for both yourself and your child at the same time.

[Ingredients]
Mackerel: 1 sliced mackerel
Ginger: 2 slices
Hot water and ice water for preparation

[Stock]
Sake: 2 tablespoons
Miso: 1.5 tablespoon
Soy sauce: 0.5 tablespoon
Agave syrup: 1.5 tablespoon
Mirin (sweet cooking sake): 1 tablespoon
Water: 300cc

[How To]
1. If the mackerel is sliced into two pieces, cut the slice without the backbone into 4 pieces for the child's portion. Cut the slice with the backbone into 2 pieces for the adult, placing several cuts on the surface.
2. Place a colander on a bowl, and lay the mackerel from (1). Pour hot water from above, then place in ice water.
3. Gently remove pieces of innards on the surface
4. Pour the stock in a pressure cooker and place on heat. Once boiling, remove from heat, and place the mackerel pieces without overlapping
5. Put the lid on and place on medium~high heat again. Once pressurized, place on low heat for 15min
6. Remove from heat and once the de-pressurized, open the lid and remove the mackerel pieces
7. Half of the stock can be used as is for the child's portion, and the other half can be used for adult's by adding sliced ginger and boiling it down
