This is a very popular rice dish. It's common to eat it with lamb or beef shank, or grilled fish. Salmon compliments this dish really well. It is a labor of love, but the end result is extremely fragrant and super delicious !

This rice is traditionally made with broad beans or fava beans, but if you can't find any, you can use lima beans as I have in this video.

4 cups basmati rice (preferably long grain)
1/4 cup salt
1 bunch dill
1 bunch cilantro
1 bunch parsley
1 bag of frozen lima beans or fava beans(1 lb, 450 gram)
Olive oil
4 tbsp butter
3-4 potatoes
1 head of garlic
saffron water
