Moroccan MSEMEN is a fairly flaky, square shaped crispy flatbread that’s made from a combination of fine semolina and flour. It’s eaten for breakfast or in the evenings with Moroccan Mint Tea or coffee. They can be topped with honey, jam, or cream cheese. You can also serve them plain. They are crispy on the outside and have several chewy layers that taste so satisfying and heavenly delicious.

INGREDIENTS:
Dough Ingredients:
3 cups fine semolina
1 cup all purpose flour
½ Tbsp sugar
1 ½ tsp salt
1/8 tsp yeast
2 cups lukewarm water
Shaping Ingredients
1 ½ cups unsalted melted butter
Vegetable oil
1 cups semolina
INSTRUCTIONS
STEP1: Making The Dough
1. In the bowl of your stand mixer, or you can also use a large bowl, with the hook attachment on place the semolina, white flour, sugar, salt, and the yeast, then mix all the ingredients together on low/med speed,
2. Start adding the lukewarm water little by little and continue mixing until you form a dough ball,
3. The quantity of the water may vary depending to your ingredients,
4. The dough should be moist and soft, but not too sticky into your dry hands, if you put too much water and your dough is too sticky just add a bit of flour to balance,
5. Kneed the dough for 10 min on low/medium speed, until the dough becomes smooth and elastic,
6. Drizzle some vegetable oil over and around the dough, and oil your bowl, place the dough back into your bowl, cover the bowl and let the dough rest for 15 min,
7. Now oil a large plate with vegetable oil, then transfer the dough into it,
8. Oil the surface of a baking sheet,
9. Start dividing the dough into equal portions, oil the dough a little and grasp a portion of the dough, using your thumb and index fingers and cut a small dough ball between these two fingers, then place it over your oiled baking sheet,
10. Keep your hands and the dough oiled,
11. Cover them with plastic wrap and let them rest for 15 min,
STEP2: Shaping the Dough
12. Drizzle oil over your work surface, take the first dough ball you cut and place it over it, oil the top and flatten it with your hands, then use your fingers and push the edges of the dough to expand it into a very
thin disk of dough, you can add oil to help you to expand,
13. The dough must be very thin and becomes transparent at that point that you can see your worksurface through it,
14. Add 1 tsp unsalted butter and spread it evenly, sprinkle the semolina,
15. Fold the upper edge towards the center add a bit of butter and semolina, fold the lower edge of the dough towards the center on top of the other edge to create a long rectangle, add a bit of butter and semolina again,
16. Fold the right side towards the center, top with some butter and semolina, then fold the left side towards the center and over the other side to create a square shape, set it aside,
17. Take the second dough ball and place it over your oiled worksurface, then repeat the same process, add the butter and the semolina,
18. Place the first square shape dough in the center of the second disk dough, add a bit of butter and semolina on top, then fold the upper and the lower edger towards the center on top of each other,
19. Fold the right and the left edges toward the center on top of each other to form a square,
20. Continue shaping the dough squares until you finish,
21. Cover the dough squares and let them rest for 10 min,
STEP3: Cooking The Msemen
22. Place a large pan over med/high heat, drizzle a large plate with
vegetable oil then place the first dough square you shaped over it and flatten it with your fingers until you get a thin square that is 2 times larger and spread a bit melted butter on it,
23. Oil your pan and reduce the heat to medium, then transfer the Msemen into it,
24. Cook the Msemen on both sides for a few minutes each, turning over few times until each side has a beautiful golden color and the center of the Msemen is cooked,
25. The msemen may puffs up while cooking, but it will immediately become flat if you push it down with a spatula,
26. The cooked Msemen should be crispy in the outside and chewy but should not taste raw,
27. Serve the Msemen warm with honey, cheese, jam, roll and enjoy,
