Ojingeo Chomuchim
(Spicy Squid Salad with Vinegar Dressing)

[Ingredients]

*Main ingredients

10 squids (2.5kg)
5 cucumbers (700g)
4 onions (600g)
1 carrot (250g)
Scallions 15 sprigs (150g)

*Parboiled squid

Water 8L
Salt 1 tbsp (10g)
Vinegar 1/2 cup (90g)
Cooking wine 1/2 cup (90g)

*Sauce

Minced garlic 1 cup (230g)
Red pepper paste 2 cups (350g)
Brown sugar 1 cup (150g)
Fine chili powder 1 cup (100g)
Ground sesame seeds 1/2 cup (25g)
Salt 1 tbsp (12g)
MSG 1 tbsp (10g)
Vinegar 1.5 cup (260g)



[Directions]

*Prepare ingredients

1. Parboil squid
- Add water, salt, vinegar, and cooking wine to a pot and bring to a boil.
- Add prepared squid body and tentacles.
- Parboil for 1 minute until squid becomes firm and white.
- When squid is cooked, remove and cool in a basket.

2. Slice scallions
- Clean scallions and remove moisture before cutting into 4cm-long pieces.

3. Slice onion
- Cut onion in half and slice into 1cm-wide pieces.

4. Slice cucumbers
- Wash cucumber and cut off ends.
- Slice cucumber in half.
- Cut split cucumber pieces into 4 sections.
- Cut the sections of cucumber into 0.5cm-wide pieces.

5. Slice carrots
- Cut carrot into 5cm-long pieces
- Cut down middle of pieces
- Slice carrots into 0.3cm-wide pieces.

6. Mix vegetables
- Put cucumber, carrot, onion in a bowl and mix.
- Make sure to break down onion chunks

7. Slice squid
- Place the parboiled squid body on a cutting board and remove ear flaps.
- Cut the body in half.
- Slice body into 1cm-wide pieces
- Slice ear area into 1cm-wide pieces.
- Use a knife to cut and separate squid tentacles.
- Cut long tentacles in half.


*Make spicy squid salad with vinegar dressing

1. Mix squid and vegetables in a bowl. Mix gently so that the vegetables don’t get squashed.
2. Vinegar-based pepper sauce is known for being sweet, spicy, and sour. Sprinkle sugar first.
3. Mix so that sugar is incorporated into mixture. You may shake the bowl as well.
4. Add minced garlic, brown sugar, vinegar, salt, MSG, red chili paste, fine chili powder, and ground sesame seeds and mix.
5. Lastly, add scallions and mix.
6. Plate up.
