It’s technically a salad, but I can’t help but call it ‘sarada,’ what I'm used to!

Take Paik Jong Won’s know-how and large-scale recipe as a base, and add your own effort and research to create your own special flavor of potato salad!

Potato salad (100 portions *Approximately 200g per person)

[Ingredients]

Main ingredients
Potato (skinned) 10kg
Cucumber 2kg
Onion 2kg
Carrot 1.5kg
Celery 500g

Seasoning
Mayonnaise 3.4kg
Brown sugar 480g
Salt 68g
Pepper 20g
Fresh cream 500ml
Vinegar 160ml

Salt (for pickled cucumber) 40g
Salt (for pickled onion) 40g
Salt (for boiling potatoes) 40g


[Directions]

Step 1: Chop ingredients

Remove skin of potatoes and wash cleanly before cutting into three pieces that are 2-cm wide. Take the stick-shaped potatoes and cut into 2-cm cubes.

After cutting carrot into three pieces 1.5-cm wide, cut sticks into three pieces 1.5-cm wide as well. Thick carrots should be cut into four pieces. Same as the potatoes, take sticks and cut into 1.5-cm cubes.

Clean cucumber and cut vertically and then slice into half-circles.

Cut onion in half vertically, and place larger side on board and cut in half again. Take onion quarters and cut into 0.2-cm thin slices.

Remove leaves from celery and cut into 3-4 pieces before thinly slicing.


Step 2: Preparation

Pickle cucumber and onion by coating evenly in salt. After 30-40 minutes, check to see it cucumber will bend, and then drain water.

In a large pot, add enough water, and then salt and potatoes once water boils. When water boils again, add carrots and cook for 2-3 more minutes.

Once potatoes are slightly cooked, take them out and remove excess water. Once water is completely removed, lay out on a large tray to cool.


Step 3: Mix salad

Place potato and carrot in a large bowl. Prepare large enough bowl for adding various ingredients.

Add salted cucumber, onion, and celery. Celery gives a unique flavor.

Add vinegar, brown sugar, and salt to the bowl and mix evenly so it doesn’t clump.

After adding fresh cream, add mayonnaise and mix evenly. Use your hand rather than a rice paddle so nothing gets crushed.

Sprinkle white pepper or regular pepper to add fragrance, and then mix once more.



Utilization

1. Sausage
Cut sausage into three long pieces, and then cut into three pieces again. Cube long pieces of sausage. Around 1.5-cm cubes like the carrots is good. Mix with salad vegetables.

2. Egg
Cook eggs and remove shells to prepare. Cut egg in half and then cut into 1-cm pieces to mix with the salad. Use the yolk as garnish on top of salad.

3. Corn (sweet corn)
Take sweet corn out of the can and drain. You have to remove excess moisture so your salad doesn’t get watery.
