Red velvet cupcakes for valentine's day-

Just in case you don’t have heart cupcake pan/heart cupcake tin/heart shaped cupcake liners/heart shaped cupcake baking pan, cupcakes in heart shape can be made by the below hack-

• Tear a piece of aluminium foil and fold it into a thick-ish rectangle.
• Place two of these folded pieces at one end in a V shape. That creates the tapering bottom of the heart shape mold.
• Take another piece of aluminium and make a small ball out of it. Place at the opposite side in the middle (as shown in the video)
• Press it down into another V shape.
The heart shaped mould is ready to bake heart shaped red velvet cupcakes.

Red velvet cupcakes with cream cheese frosting
home made red velvet cupcakes-
Makes 8 -
• All-purpose flour – 100 g [ 3/4 cup]
• Cocoa powder – 10 g [ 1 ½ tbsp.]
• Baking soda – 1.6g [¼ tsp + 1/8th tsp.]
• Warm milk – 100 g
• Room temperature vinegar – 5.5 g [1 ¼ tsp]
• Powdered sugar – 95 g [ ¾ cup + 1 ½ tbsp.]
• Sunflower Oil / Canola Oil / Rice Bran Oil – 45 g [ 3 ½ tbsp.]
• Vanilla essence – 4 g [1 tsp]
Red food colour – 4-5 drops (for red cupcakes)

¬ Warm the milk slightly and add the vinegar in it. Mix with a whisk gently. Allow milk to curdle for 2-3 minutes.
¬ In another bowl add the all-purpose flour, baking soda and cocoa powder. Mix it and pass it through a sieve. This helps in removing all the lumps and makes softer fluffier cupcakes.
¬ Add powdered sugar to the curdled milk (If your powdered sugar has lumps in it, pass that through a sieve as well) Then add oil and mix vigorously until a homogenous liquid is formed.
¬ Add the food colour to it and mix again.
¬ Add the dry ingredients to this liquid in 2 batches. Mix gently between after each addition.

¬ Adding the dry ingredients to the red liquid batter will darken the colour of it due to the brown cocoa powder.
¬ Transfer the batter into the cupcake tray. Fill the batter to a level slightly lower than half of the mold. This will give the batter space to bake and rise and not over flowing while maintaining its heart shape.
¬ Bake at 160 degrees Celsius pre-heated oven for 17 to 20 minutes. Check at the 15-minute mark. Insert a skewer in the middle of the cupcake. If it comes out almost clean with a few crumbs it is done. Your baking time might differ slightly as every oven is different.
¬ Once baked let the cupcakes cool at room temperature for at least 30 minutes.

Trouble shoot the cupcake shape-
• Balance a serrated (or normal) knife on the ends of the cupcake liner. Slice it slowly in a back and forth sawing motion while keeping your blade parallel to the surface.

Cream cheese frosting for red velvet cakes-
This frosting for red velvet cupcakes is really tasty. Decorating heart shaped cupcakes with this frosting is easy.
• 100 g cream cheese
• 40 g icing sugar
• 2 tsp vanilla essence.

¬ Using an electric hand mixer with a whisk attachment or a hand whisk mix the sugar and cream cheese slowly until the sugar is completely mixed.
¬ Increase the speed after that unit the frosting is smooth and creamy. For and electric mixer, this should be around 4-5 minutes. For manual whisk around 12 minutes.
¬ Fold a piping bag over a glass as shown so that it becomes easy to fill the frosting in it.
¬ Drop the piping nozzle and fill the bag with frosting.
¬ Don’t over fill the bag to the end.
¬ Use a spatula to bring all the frosting to the front of the bag so that there is no gap or air bubbles in it.
¬ Pipe the frosting on the cupcake slowly.
¬ In case you don’t have a nozzle, fill the piping bag without it and pipe just as is. This will also create a beautiful heart shape.
