The best of both recipes-
For the marinade-
Bhuna Besan (roasted gram four) is a must.
Bone-in chicken gives more flavor (not broiler) Boneless is easier to cook.
2 marinades for bone-in chicken, 1 for boneless.
For the makhni-
Use ginger garlic green chilies along with cinnamon stick and bay leaf.
Do not add too much water. Only until the tomatoes cook down.
Use curd along with butter and cream.
For the final cooking-
Use sugar instead of honey.
Don’t skimp on the butter.
For cooking the chicken-
Sear the chicken in ghee instead of butter.
Use gas stove instead of induction.
For the smokiest flavor smoke during margination and after final cooking.
