Hi, this is Jangnamcook.
How do you normally cook your braised tofu?
I always take the moisture out from tofu before I braise it.
Just changing how to take moisture out, will make your braised tofu so much better!
Today, I'm going to show you how to make delicious braised tofu.

[Ingredients]
Tofu 300~400g
Half of Onion 80g
Half of Green Onion 100g

[Sauce Ingredients]
Tuna Sauce 1T 15g
Soy Sauce 2T 30g
Chili Powder 2T 16g
Sugar 1T 15g
Smashed Garlic 1T 8g
Little bit of smashed ginger
Perilla Oil
Sesame

[Shiitake Water Ratio]
Water 300g
2 Shiitake Mushroom 10g

[Cooking Tip]
1. Cut the tofu in 1.5cm to make the outside crispier and the inside moisturized
2. Blanch the tofu in hot water to keep the moisture inside but dry out the outside to make it crispy
3. Braise the tofu in special shiitake water to fill in with more flavor
4. Grill the tofu in medium heat to avoid burning
5. Leave a bit of broth. The tofu will eat up the sauce as it dries + overcooking makes tofu less tender
