One of the most iconic wild edible mushrooms that people like to forage for is the Chanterelle. Today we are going to go out into the forest to find these mushrooms and to see what they look like in their native habitat. Golden and beautiful, tough to confuse with anything else, and delicious- these mushrooms are truly a prize for foragers. This mushroom is often the first mushroom that people learn to forage in the wild.
It was the first mushroom that I felt confident in identifying after my grandmother sent my into the woods as a child, with a bucket, to see if I could find any wild mushrooms for the dinner table one night. I returned with several large and beautiful golden Chanterelles to her delight, and that night she made a beef pot roast with the most sumptuous Chanterelle gravy that I will never forget. The excitement of finding these mushrooms, along with the delicious meal that followed, solidified my obsession with foraging for wild mushrooms. Although I have seemed to develop an allergy within the past few years, I still get a real thrill out of finding them, and giving them to family or friends!
"Chanterelle" is the common term for these kind of mushrooms, and in this video we encounter 3 distinct types of "Chanterelles," The Pacific Golden Chanterelle, Cantharellus formosus, The "White Chanterelle," Cantharellus subalbidus, and the "Winter Chanterelle," Craterellus tubaeformis, which is actually in an entirely different genus of fungi, but produce small and delicious mushrooms with features similar to that of the other 'true' Chanterelles, like the forking false gills and golden color.
