1/4 cup unsalted butter (for cooking)
Powdered sugar (for serving)
Lemon wedges (optional, for serving)
Fresh berries or fruit (optional, for serving)
Instructions
Preheat the Pan
Place a 10-12 inch skillet or frying pan on the stove over medium heat. Add 1/4 cup unsalted butter and allow it to melt, swirling the pan to coat the bottom.
Prepare the Batter
In a mixing bowl, whisk together:
3 large eggs
3/4 cup milk
3/4 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
Mix until smooth and well combined.
Cook the Pancake
Once the butter is melted and bubbling, pour the batter into the skillet.
Cook for about 3-5 minutes, or until the edges begin to puff up and the center is set.
Finish Cooking
Serve
Remove from the oven and sprinkle with powdered sugar.
Optionally, serve with lemon wedges and fresh berries.
Tips
For added flavor, you can mix in some cinnamon or nutmeg to the batter.
Serve immediately, as the pancake will deflate as it cools.
