Full Recipe:

| Ingredients |

-1/2 of a pork belly
-Ash Kickin' BBQ Honey Chipotle
-Tailgater's BBQ Party Rub
-Vinegar BBQ Sauce

| Instructions |

Prep:

1. Remove any bits of loose fat on the pork belly.

2. Season the pork belly first with Party Rub, followed by my Ash Kickin' BBQ Honey Chipotle Rub. A medium coat of both works well.

3. (Optional) allow the pork belly to sit uncovered and refrigerated overnight.

| Cooking |

1. Set your smoker for 250º F

2. Put the pork belly on the smoker, and allow it to smoke until the color is where you want it. For me, this pork belly smoked until about 180º F internal before it was time to wrap, and the color was where I wanted it.

3. Once the color is where you want it, wrap the smoked pork belly per the instructions in the video.

4. After the pork belly is wrapped, put it back on the smoker and continue smoking until tender. I put a probe back in and checked for tenderness at 203º F.

5. Once the smoked pork belly is tender, remove it from the smoker and let it sit uncovered for 10-15 minutes, then cover, and allow it to rest for 1 hour.

6. After 1 hour of rest, slice, eat, and enjoy this pork belly smoked like a brisket, it's truly amazing!
