[Recipe for grilled chicken thigh with mustard mayonnaise] (for 2 people)

[Material]
・Chicken thigh 300g
・Salt, pepper appropriate amount
・Weak flour Appropriate amount
・Appropriate amount of olive oil

*Mustard mayonnaise
・1 egg yolk
・Grated cheese 1 tablespoon
・1/3 tbsp Worcestershire sauce
・1 tablespoon of mustard
・2 tablespoons mayonnaise
・Sugar 1 tsp
・a little salt
・Appropriate amount of white pepper

① Remove the excess skin, fat, and cartilage from the chicken thigh, and open the thick part with a knife to make the overall thickness a little uniform.

② Put it in several places of the cut so as to cut off the fibers and cut it into 3 pieces.

③ Sift salt and pepper on both sides, and sieve cake flour on the skin.

④ Pour olive oil into a medium-heat frying pan and bake from the skin side.

⑤ When the skin becomes golden brown, turn it over, lower the heat to low, and cook about 90% of the inside.

⑥ Since it takes a little longer to cook completely, let it rest for about 5 minutes with preheating while draining the oil.

⑦Mix egg yolk, grated cheese, Worcestershire sauce, mustard, mayonnaise, sugar, salt and white pepper to make mustard mayo.

⑧Cut the rested chicken into 3 to 4 pieces and pour mustard mayonnaise over the top.

⑨ Bake in a toaster for a few minutes until cooked through, and when the surface has a nice brown color.

⑩ When serving, collect the sauce that flowed around and serve it on a plate.
