Resep Pangsit Le Gino. Kali ini aku mau coba menduplikasi salah satu makanan yang sedang viral, Pangsit Goreng Le Gino. Di sini aku menggunakan daging ayam untuk isian pangsit dan memadukannya dengan bumbu ‘rahasia’ yang biasa aku pakai untuk memasak mie atau nasi goreng. Pastinya enak dan gak perlu ngantri lama karena bisa bikin sendiri di rumah.

Resep Pangsit Goreng

Bahan pangsit (untuk 40 pcs):
1 pack kulit pangsit
300 gr paha ayam fillet
20 gr ebi, rendam air
4 siung bawang putih halus
2 sdm tepung sagu
3 sdm air jahe
2 sdt minyak wijen
4 sdt saus tiram
1 sdm gula
1 sdt garam
1 sdt kaldu jamur

Bumbu ebi (untuk 250 gr):
16 siung bawang putih
12 buah kemiri
20 gr ebi, rendam air
1 buah terasi
125 ml minyak

Bahan lainnya (untuk 2 porsi):
2 butir telur
3 siung bawang merah, iris
2 siung bawang putih, cincang
1 batang daun bawang, iris
1 buah caisim, iris
25 gr tauge
50 gr kol, iris
5 buah bakso sapi, iris
75 gr paha ayam fillet, iris
3 sdm kecap manis
2 sdm saus tiram
2 sdm kecap asin
½ sdt garam
¼ sdt kaldu jamur
¼ sdt merica

Langkah:
1. Untuk bumbu ebi, potong-potong bawang putih dan kemiri lalu masukkan ke dalam blender bersama minyak, terasi, dan ebi, blender hingga halus. Tumis hingga wangi dan berwarna cokelat
2. Untuk isian pangsit, blender semua bahan hingga halus menggunakan food processor
3. Ambil satu lembar kulit pangsit, taruh 1 sendok teh adonan lalu oleskan air di kulit pangsit dan lipat menjadi segitiga kemudian kedua ujungnya ditekuk dan dilem lagi menggunakan air
4. Rebus air agak banyak, masak hingga pangsit mengapung
5. Tumis bawang merah dan bawang putih, masukkan telur dan masak hingga kering. Lalu masukkan ayam, bakso, pangsit, saus tiram, kecap asin, dan kecap manis aduk rata
6. Masukkan 2 sendok makan bumbu ebi. Bumbui dengan garam, merica, dan kaldu jamur, aduk rata
7. Masukkan kol, tauge, caisim, dan daun bawang, masak sebentar
8. Pangsit goreng siap disajikan

VIRAL Fried Dumplings a la Le Gino Recipe

Fried Dumplings Recipe

Filling ingredients (for 40 pcs):
1 pack dumpling wrappers
300 g chicken thigh fillet
20 g dried shrimp, soak in water
4 clove minced garlic
2 tbsp sago flour
3 tbsp ginger liquid
2 tsp sesame oil
4 tsp oyster sauce
1 tbsp sugar
1 tsp salt
1 tsp mushroom stock powder

Dried shrimp spice mix (for 250 g):
16 clove garlic
12 pc candlenuts
20 g dried shrimp, soak in water
1 pc shrimp paste
125 ml oil

Other ingredients (for 2 servings):
2 pc egg
3 pc shallots, sliced
2 clove garlic, minced
1 pc leeks, sliced
25 g bean sprouts
50 g cabbage, sliced
5 pc beef meatball, sliced
75 g chicken thigh fillet, sliced
3 tbsp sweet soy sauce
2 tbsp oyster sauce
2 tbsp soy sauce
1/2 tsp salt
1/4 tsp mushroom stock powder
1/4 tsp pepper

Steps:
1. For the dried shrimp spice mix, chop the garlic and candlenuts and add to the blender with oil, shrimp paste, and dried shrimp. Blend to a paste. Sauté until fragrant and the color browns.
2. For the filling, blend all ingredients until smooth with a food processor.
3. Get one dumpling wrapper and place 1 tsp of filling. Brush some water on the skin and fold into a triangle. Fold the edges together and glue it on with water.
4. Boil water in a fairly large quantity and boil the dumplings until they float to the top.
5. Sauté the shallots and garlic. Add the eggs in and cook until they're fragrant. Add in the chicken, meatballs, dumplings, oyster sauce, soy sauce, and sweet soy sauce. Mix well.
6. Add 2 tbsp of the dried shrimp spice mix. Season with salt, pepper, and mushroom stock powder. Mix well.
7. Add the cabbage, bean sprouts, bok choy, and leeks in. Cook for a moment.
8. Fried Dumplings are ready to serve.
