I am sharing you my version of "Burong Hipon also called Tagilo or Balao Balao" A special fermented Rice & Shrimps dipping sauce originated from our province Pampanga. This is most of us Kapampangans favorite dipping sauce for fresh or boiled veggies or fried fish. My family and friends love this version, hope you'll love it too. Bon appetit. All ingredients are optional, modify as per your liking. Take everything in moderation. "Health is Wealth".

Burong Hipon | Tagilo | Balao Balao
Ingredients:
Shrimps Marinade:
2 cups - Shrimps (trim& devein)
1/4 cup - coarse salt
2 tbsp - brown sugar
3 tbsp - chili powder

Combine:
5 cups - Cooked Rice (better if cooked softer)
Marinated Shrimps
2 pcs - Airtight Bottles, sterelized

Cooking:
1 cup - olive oil
1/3 cup - ginger
1/3 cup - garlic
1 tbsp - spicy chilis
1 cup - onions
6 cups - Burong Hipon/ Fermented Rice & Shrimps
2 cups water

Note: Best weather for fermentation is about 68 to 80°F (20 to 26°C), below that temperature will take slower. Above that temperature will ferment faster.

Cooking Time: approximately 55 minutes
Serving: 40+ people
Fermentation: 14 days
