Full of goodness, healthy and very delicious salad . This easy salad is very filling and will make a prefect lunch perhaps with some cheese on the side.
The Tahini sauce is very versatile and goes with virtually anything - meat, fish, vegetables and takes only a few of minutes to make.
Serves 2-3. 150 g green lentils, 2 smallish aubergines, 1 large red pepper, 2 large tomatoes, handful of parsley, olive oil, cumin, dry thyme, Aleppo chilly.
Tahini sauce: 2-3 table spoons well stirred tahini, 1 clove of garlic, cumin, juice of half lemon.
