Today I tried making Japanese-style grilled ginger pork with Korean ingredients!
I'll also share with you a tip on choosing cooking wine~

Japanese-style grilled ginger pork (1 serving)

[Ingredients]

220g pork hind leg
3 tbsp (21g) cooking oil
1 (10g) stalk chives
some julienned cabbage
some mayonnaise
some black pepper

*Sauce
1/10 cup (20g) thick soy sauce
1/10 cup (18g) cooking wine
1/10 cup (14g) brown sugar
1/10 cup (18g) filtered water
1/4 tbsp (5g) minced ginger

[Directions]

1. Thinly slice the pork hind leg to about 0.2cm thick.
* If the meat is thick, chop it in half.
2. Chop the chives into 0.5cm pieces.
3. Julienne the cabbage and let it soak in cold water.
4. To make the sauce, combine the brown sugar, cooking wine, thick soy sauce, water, and minced garlic.
5. Coat the frying pan with cooking oil and preheat over high heat
6. Place the pork onto the frying pan, slice by slice, and cook until golden.
7. Pour the sauce and simmer until the meat has soaked up most of the sauce and just a little is left on the pan.
8. Place the julienned cabbage on one side of the plate.
9. Place the Japanese-style grilled ginger pork next to the cabbage. Pour the remaining sauce over the pork and garnish with chives.
10. Add some mayonnaise and sprinkle some black pepper on the cabbage and serve.


*돼지고기생강구이
돼지고기뒷다리살 220g
식용유 3큰술(21g)
쪽파 1줄(10g)
양배추채 약간
마요네즈 약간
후추가루 약간

*소스
진간장 1/10컵(20g)
맛술 1/10컵(18g)
황설탕 1/10컵(14g)
정수물 1/10컵(18g)
간생강 1/4큰술(5g)

[ 만드는 법 ]

1. 돼지고기 뒷다리살은 두께 0.2cm 정도로 얇게 썰어 준비한다.
* 고기가 두꺼울 경우 1/2크기로 잘라 준비한다.
2. 쪽파는 두께 0.5cm로 송송 썬다.
3. 양배추는 가늘게 채 썰어 찬물에 담궈 준비한다.
4. 황설탕, 맛술, 진간장, 물, 간생강을 섞어 소스를 만든다.
5. 프라이팬에 식용유를 두르고 강 불에 예열한다.
6. 돼지고기를 1장씩 펼쳐 프라이팬에 올린 후 전체적으로 노릇하게 굽는다.
7. 준비한 소스를 붓고 고기에 배인 후 약간 남아 있을 때 까지 조린다.
8. 그릇에 양배추 채를 한 쪽에 올린다.
9. 양배추 옆에 돼지고기생강구이와 남은 소스를 올린 후 송송 썬 쪽파를 올린다.
10. 양배추 위에 마요네즈, 후춧가루를 뿌려 완성한다.
