PORK ESTOFADO is another Filipino dish with soy sauce and vinegar combined with pineapple juice which makes it more flavorful added with fried plantains or saba. You will definitely love the creaminess of the sauce and the flavorful taste of the pork in every bite. This is one of the famous Filipino dishes that is so easy to make and definitely delicious. It is so simple to make you will be done in no time. Great for busy weeknights.

Here is how to cook PORK ESTOFADO :
PORK ESTOFADO :
Ingredients:
2 lbs pork, cut into chunks
1 large onion, chopped
7 garlic cloves , minced
2 large plantain or saba, sliced
2 medium carrots. sliced
1 1/2 cup beef broth
1 tbsp Worcestershire sauce
3 dried bay leaves
1 tbsp brown sugar
3 tbsp oil
1/2 tsp pepper, divided

Marinade:
1/4 cup soy sauce
1/4 cup oyster sauce
1/2 cup vinegar
1 cup pineapple juice
1/4 tsp pepper

Directions:
1. In a large bowl, combine all marinade ingredients. Add the pork in and massage to coat in the marinade. Cover and refrigerate. Let it marinate for at least 30 minutes.
2. In a pan, heat oil over medium high heat.
3. Fry banana until both sides are browned. Remove from the pan. Set aside.
4. In the same pan, sear pork by batches until both sides are browned. Remove from the pan. Set aside.
5. In the same pan, add onion, cook until translucent.
5. Add garlic. Cook until lightly browned.
6. Add back the pork. Stir fry for 3 mins.
7. Add the marinade. Bring to boil for 5 mins.
8. Add beef broth, Worcestershire sauce, dried bay leaves, brown sugar and 1/4 tsp pepper. Stir until sugar dissolved and well combined. Cover with lid and let it simmer over medium heat for 30 to 40 mins or until meat is fork tender. Stir occasionally.
9. Once meat is fork tender, add carrots and pepper. Stir until well combined. Cover with lid and let it simmer for 5 mins.
10. Add the cooked plantains. Stir until well coated with sauce.
11. Continue to simmer uncovered until it reaches your preferred consistency.
12. Serve and Enjoy! Best served with steamed rice.
