Ingredients List:
Salt
Ground Black Pepper
Holy Trinity - Celery, Sweet/Yellow Onion, Bell Peppers with additional garlic and jalapeno/serrano pepper
Herbs - Fresh Bay Leaves, Thyme, and Rosemary
Chicken Broth, used 64 Oz
Amber Ale or a dark stout beer like Guinness
Protein/Meat - 8 Bone in Chicken Thighs , 2 lbs Smoked Sausage
Rue - Equal parts Grapeseed oil, or neutral high smoke point oil, and all purpose flour
Garnish - Green onions or parsley , dependent on preference
