Resep Takoyaki (untuk 30 pcs)

Bahan adonan:
200 gr tepung terigu protein sedang
15 gr maizena
650 ml air
1 butir telur
1 sdt baking powder
1 sdm dashi bubuk
½ sdt garam
1 sdm aonori

Bahan tenkasu:
100 gr tepung terigu protein sedang
200 ml air
1 sdt baking powder
½ sdt garam

Bahan saus:
60 gr saus tomat
100 gr kecap inggris
200 gr saus teriyaki
10 gr gula pasir
30 gr saus tiram

Pelengkap:
daun bawang
gurita
aonori
katsuobushi

Cara membuat:
1. Di dalam mangkuk campurkan tepung terigu, garam, baking powder dan air, aduk rata kemudian masukkan ke dalam plastik segitiga
2. Panaskan minyak, semprotkan adonan secara perlahan kemudian goreng sesaat di api sedang kecil, tiriskan
3. Di dalam mangkuk campurkan tepung terigu, maizena, baking powder, aonori, telur, garam, dashi bubuk dan air secara perlahan, aduk hingga rata
4. Iris halus daun bawang dan potong gurita
5. Panaskan cetakan takoyaki dan tuang sedikit minyak kemudian tuang adonan
6. Masukkan gurita, tenkasu dan daun bawang kemudian balikkan setengah takoyaki dan tuang kembali adonan, bentuk bulat dan masak hingga kecokelatan
7. Untuk saus, di dalam panci masukkan saus teriyaki, saus tomat, saus tiram, kecap inggris dan gula pasir, aduk rata kemudian masak hingga mendidih, sisihkan
8. Takoyaki siap disajikan

Takoyaki Recipe (yield 30 pcs)

Batter ingredients:
200 g all-purpose flour
15 g cornstarch
650 ml water
1 pc egg
1 tsp baking powder
1 tbsp dashi powder
½ tsp salt
1 tbsp aonori

Tenkasu ingredients:
100 g all-purpose flour
200 ml water
1 tsp baking powder
½ tsp salt

Sauce ingredients:
60 g ketchup
100 g Worcestershire sauce
200 g teriyaki sauce
10 g sugar
30 g oyster sauce

Add-ons:
Green onions
Octopus
Aonori
Katsuobushi

Steps:
1. In a bowl, mix all-purpose flour, salt, baking powder, and water. Stir well, then transfer to a piping bag.
2. Heat oil. Drip the batter in slowly, then fry briefly over medium-low heat. Drain.
3. In a bowl, mix all-purpose flour, cornstarch, baking powder, aonori, egg, salt, dashi powder, and water slowly. Stir until mixed well.
4. Finely chop green onions and cut the octopus into pieces.
5. Heat a takoyaki pan and add a small amount of oil, then pour in the batter.
6. Add octopus, tenkasu, and green onions, then flip the takoyaki halfway and pour more batter to shape into balls. Cook until browned.
7. For the Sauce, in a saucepan, combine teriyaki sauce, ketchup, oyster sauce, Worcestershire sauce, and sugar. Stir well, then cook until boiling. Set aside.
8. Takoyaki is ready to serve.
