BATAVIAN LIGHT CURRY

500 gr kikil (1 lb of cow trotters)
500 gr daging sapi (1 lb of beef)
2000 CC air (9 cups of water)
1 SDM margarine (1 tbsp of margarine)
5 siung bawang merah iris (5 bulbs of shallot, sliced)
2 bt daun bawang (2 stalks of scallion)
1 bh tomat (a tomato)
1 bh wortel (a carrot)
7 lbr daun jeruk (7 keffir lime leaves)
4 ibu jari lengkuas (2 oz of galangal)
3 lbr daun salam (3 Indonesian bayleaves)
5 bh bunga Lawang (5 star anise)
5 bh kapulaga (5 cardamom)
5 bh cengkeh (5 cloves)
1 ruas jari kayu manis (1 tsp of cinnamon)
1 bh pala (a nutmeg)

bumbu halus: (blended ingredients)
9 btr kemiri (9 candlenuts)
11 siung bawang putih (11 cloves of garlic)
7 siung bawang merah (7 bulbs of shallot)
1/2 bh bawang bombai (half an onion)
1 ibu jari jahe (a dice of ginger)
1 SDM ketumbar bubuk (1 tbsp of coriander powder)
1 sdt jintan bubuk (1 tsp of cumin powder)
1 sdt lada bubuk (1 tsp of ground pepper)
1 SDM bawang goreng (1 tbsp of fried shallot)
1 sdt garam (1 tsp of salt)
4 sdt kaldu bubuk (4 tsp of stock powder)


resep acar: (pickle)
1 bh timun (a cucumber)
1/4 sdt garam (1/4 tsp of salt)
1/2 sdt gula (1/2 tsp of sugar)
1 SDM air lemon (1 tbsp of lemonwater)

resep sambel : (chili paste)
50 gr cabai (2 oz of chili)
100 CC air (4 oz of water)
1 siung bawang putih (a clove of garlic)
1/4 sdt garam (1/4 tsp of salt)

2 bt daun bawang iris (2 stalks of scallion, sliced)

500 gr kentang rebus lalu digoreng (1 lb of potatoes, boiled then fried)

emping goreng (gnetum crackers)

bawang merah goreng (fried shallot)
